LEEKS - Allium porrum. One of the first vegetables cultivated by early man. They belong to the onioin family, but are sweet and mild. Can be cooked as a vegetable or added to soups, especially in split pea and potato soups. Plant in spring as soon as the soil can be prepared and soil temperature reaches at least 60º. Grows best in loose soil rich in organic matter. To grow sweet, white stemmed leeks, mound the soil up around the base of the plant as it grows. Approximately 10,000 seeds per ounce or 350-360 seeds per gram.
