Winter Savory is used like Summer Savory, but has a more intense flavor. Mounded shrubby bush covered with tiny white flowers makes for a good border plant. Bees love Winter Savory.

Directions: Sow seed indoors in sterile seed starting mix with a soil temperature of  70 to 80˚ . Germination takes 10-20 days. Do not cover the seed as it  needs light to germinate. If started in seed trays, transplant when seedling are 2” tall and continue growing on at soil temperatures of 65-70˚. Transplant to garden when plants are 4-6” tall. Plant in well prepared, well drained soil that has been amended with rich compost or a good garden fertilizer. Water frequently until established then reduce watering. Winter Savory can tolerate some drought. Prune plants back hard in fall to maintain healthy, well shaped plants. Remarks:  For drying, the nearly mature stems should be cut just as the blossoms begin to appear. Leaves are very aromatic and impart a distinctive flavor when used in seasoning meats, dressings and other culinary preparations.
